This is a delicious twist on a classic.
Ingredients
1 1/2 c. - Fresh Basil
1/8 c. - Toasted pine nuts
1/3 c. - Parmesan
1/4 c. - Olive Oil
3 cloves - Garlic
2 c. - Cooked Shell Pasta
1/4 c. - Butter
1 Tbsp. - Flour
1/4 c. - Heavy Cream
1/3 c. - Water
1 1/2 c. - Mozzarella
1/2 Tsp. - Salt
Instructions
Cook pasta.
Using a food processor or blender, blend together basil, pine nuts, parmesan, olive oil, and garlic.
Drain pasta and in the same pot (less dishes are always better!) on medium-low heat melt butter and add in flour to make a roux.
Mix in heavy cream and pesto.
Add in pasta, mozzarella, and salt.
In a glass baking dish, bake in the oven at 375° F for about 20-25 minutes.
