Pumpkin Pie Cupcakes with Maple Cream Cheese Frosting

Cupcakes


2 - Eggs

1/4 c. - Canola Oil

2 c. - Sugar

1 Tsp. - Vanilla Extract

1 Tsp. - Baking Powder

1/2 Tsp. - Salt

2 c. - Flour

1 packet- Vanilla Pudding Mix

1 c. - Roasted Pumpkin

3/4 c. - Almond Milk

1 Tsp. - Pumpkin Pie Spice

1 Tbsp. - Maple Syrup


  1. Preheat oven to 350° F.

  2. Combine oil, eggs, sugar, and vanilla extract.

  3. In a food processor combine the roasted pumpkin, almond milk, and maple syrup.

  4. Add to wet mixture.

  5. Slowly add in dry ingredients; flour, salt, pumpkin pie spice, vanilla pudding mix, and baking powder.

  6. Using a 1/4 cup scoop mixture into cupcake liners and bake for 25-30 minutes.

  7. Allow to cool before frosting.


Maple Cream Cheese Frosting


8 oz - Cream Cheese

1 stick - Butter

1 Tsp. - Pumpkin Pie Spice

1/8 c. - Maple Syrup

3 c. - Powder Sugar


  1. Allow for cream cheese and butter to come to room temperature. I typically leave them out over night.

  2. Beat together cream cheese and butter until smooth.

  3. Slowly add in powder sugar.

  4. Add in maple syrup and pumpkin pie spice.

  5. Top cupcakes and for decoration add a sprinkle of spice and a pecan.
